Step-by-Step Cooking Instructions
Step 1: Prepare the Batter
In a bowl, mix 2 scoops of Ruby Roti Mix with 2 spoons of curd. Gradually add water while stirring to form a smooth, thick batter without lumps.

Step 2: Temper the Spice
Heat 2 tablespoons of oil in a pan, then add 1 teaspoon of ghee. Once hot, add jeera, green chili, and ginger garlic paste. Sauté until fragrant, then add curry leaves.

Step 3: Cook the Khichu
Pour the prepared batter into the pan and add salt. Mix well for about 2 minutes on medium flame, then cover with a lid and cook for 5–7 minutes until the mixture starts to firm up.

Step 4: Final Mix & Serve
Uncover and stir for another 5 minutes, then increase to high flame and cook until the gujarati khichu no longer sticks to the pan. Serve hot, drizzle with ghee, and sprinkle chilli flakes on top for added flavor.
